Ingredients
- 1 cup Green or Brown Lentils rinsed
- 1 pc medium Sweet Potato diced
- 1 pc Carrot chopped
- 1 pc small Onion diced
- 2 cloves Garlic minced
- 1 tsp Turmeric Powder
- 1 tsp Cumin
- ½ tsp Paprika
- 4 cups Vegetable Broth
- 1 cup Kale or Spinach chopped
- 1 tbsp Olive Oil
- Salt & Pepper to taste
Instructions
- heat olive oil ion a large pot over medium heat. Add onion and garlic, saute for 2 minutes
- Add carrots, sweet potato, turmeric, cumin and paprika. Stir well
- Pour lentils and vegetable broth. Bring to a boil, then reduce heat and simmer fore 25 minutes
- Stir in kale or spinach, season with salt and pepper, and cook for 5 more minutes
- Serve warm and enjoy nourishing, gut-healing meal
Creamy Avocado & Chickpea Salad
Ingredients
- 1 can (15oz) Chickpeas drained and rinsed
- 1 pc ripe Avocado mashed
- ½ pc Cucumber diced
- ¼ pc red Onion finely chopped
- 1 pc Lemon juiced
- 1 tbsp Olive Oil
- ½ tsp Garlic Powder
- Salt & Pepper to taste
Instructions
- In a large bowl, mash the avocado with lemon juice, olive oil, and garlic powder
- Add chickpeas, cucumber, and red onion. Mix well
- Season with salt and pepper to taste
