Blend the banana, strawberries, and coconut milk together until smooth.
Stir in the ground chia seeds, shredded coconut, and stevia.
Pour mixture into a bowl or jar.
Refrigerate for at least 1-2 hours (or overnight for best results) to allow the chia seeds to absorb the liquid and thicken into a pudding consistency.
Once thickened, stir and enjoy. You can top with extra shredded coconut or fresh fruit if desired
